Shepard's Pie

I have fond memories of this dish as a child. I still remember one night in particular that my mom was preparing it. Ashley and I were jumping on the trampoline in our backyard in Montana and we couldn't wait for dinner to be ready. Mmmm.

Who would have thought I'd wait almost seven years to make it for my own family! It's delicious and feeds a lot (or you can just have lots of leftovers)!

1 lb. ground beef or turkey (I prefer the latter)
1 can tomato soup (don't use 1 can of water)
1 can green beans (don't drain water)
onion, chopped
shredded cheddar cheese
salt & pepper
8 servings prepared mashed potatoes (I used potato pearls from the church cannery)

Brown beef (or turkey) with chopped onion and salt and pepper, add tomato soup and green beans. Layer mixture in the bottom of a 13x9 casserole dish, top with prepared mashed potatoes and sprinkle with cheese.

Bake for about 25 minutes or until cheese melts at 375 to 400 degrees.

I loved this dinner dish as a child also and still love it today! I haven't tried it with turkey though...thanks for the good idea.
